We are blessed to live in an area with so many dedicated producers working hard to supply us with fresh greens throughout the winter. It's a lot of work to keep tender greens growing this time of year when there is less light and severely cold temperature fluctuations. What better time to add a spring-like salad to your menu with winter root veggies to provide you with a pop of colour plus a beneficial vitamin boost. Glorious greens and colourful roots salad1/2 of a bag of your choice of greens(Forman Farms, Burts Greenhouse) 1/2 watermelon radish waffle sliced thin, or waffle-cut (Patchwork Gardens) 1 medium candy cane beet waffle-cut (Patchwork Gardens) 1 medium golden beet waffle-cut (Patchwork Gardens) 1 carrot thinly sliced (Patchwork Gardens) 1 Apple sliced thin (Halls Apple Market) Wash rinse and dry the greens. Put greens in a serving bowl. Decorate with the nutritious veggies adding a choice of nuts, seeds and cheese if you wish. Add a bit of any of our maple pumpkin vinaigrette or roasted tomato vinaigrette, or Kricklewood flavoured sunflower oil. Toss and serve! This is only a guideline.
