Rick & Wendy & Leigha Thanks for Supporting Local Farmers Recipe of the Week Watermelon Radish & Goat Cheese Salad Serves 4. 2 Watermelon Radishes (8 1/2 oz peeled, quartered, sliced) – Roots Down Organic, Patchwork Garden 2 Mini Cucumbers sliced – SunTech Greenhouses 1 Shallot thinly sliced – Patchwork Gardens 2 large Empire Apples, cored and sliced – Halls Apple Orchard 1/4 cup lemon juice 1/3 cup Sunflower Oil – Kricklewood Farm 1/2 lb bag Mixed Greens – Roots Down Organic 4 ounces of Sheep Feta – The Milkhouse Put all ingedients in a large bowl (except the cheese). Toss gently until combined. Assemble onto 4 plates and top with crumbled Feta. Enjoy!
